Wisconsin Cauliflower Soup

DIVINE!!!

2 tbsp butter
1 medium onion chopped
¼ cup flour
½ tsp salt
2 Cup milk
1 can chicken broth
1 head cauliflower cut
1 tsp Dijon mustard
½ cheddar cheese
1 cup pepper jack cheese

Melt butter in pan over medium heat. Add onion, cook until golden brown. (10min). Stir in flour and salt. Cook for 2 minutes stirring frequently. Gradually stir in milk, broth and 1 ½ cup water. Add cauliflower. And heat until boiling. Reduce heat to low, cover and simmer for about 10 minutes, until cauliflower is tender. Blend with blender center of top off, small batches at a time, until smooth. Return to sauce pan and heat over medium heat until hot, stirring occasionally. Remove from heat, stir in mustard and cheese. Top with ½ cup cheddar cheese.

Calzones....Super Easy Dinner

I get bored of having almost the same thing every other week for dinner so I decided to try this....making a calzone; I was a little worried it would be hard to make but it was way easy! My husband, parents and siblings all loved it!


What you will need:

  • 1-2 pizza dough-it all depends on how big the family meal will need to be (get in the refrigerated section)
  • Pizza sauce are marinara sauce
  • Pizza toppings (Whatever you like!)
    • Examples are: Cheese (any kind), mushrooms, olives, ham, Canadian bacon, onions, peppers, pepperoni, and sausage. Seriously though anything works as long as it is cheese, veggies and/or meat to put into it!
How to Make:

  • Roll pizza dough into a rectangle the length of your baking sheet. It can be wider than the sheet because you will be folding the sides in. Place the dough on the baking sheet and let the sides hang off.
  • Put sauce on the center half of the dough. 
  • Just like if you were making a pizza add your toppings...in any order you would like but save the cheese to go on the top of everything
  • Next cut the sides of the dough at about 3/4 inch intervals and don't cut all the way to the filling...you almost reach the filling though
  • Once the dough is all cut you will wrap it all up by alternating sides of the dough; the picture will explain a little easier

  • Bake at 375 degrees for 25-30 minutes.
This served six of us perfectly.
Not at all hard to make as long as you have the ingredients on hand!

Yummy Pretzel Bites!!

Ok, so I am addicted to Pinterest but I have found so really yummy recopies on there and the first one I tried was pretzel bites. They are super easy and super yummy!! :)





  • First you need a bag of Rhodes Roll dough from the frozen section at the grocery store 



    • Grab out as many rolls as you want and let them thaw
    • After they have thawed and risen a little you can either cut it into four pieces (horizontally and vertically) or roll it out like a worm and cut that into four slices.
    • Once your pieces are cut let them rises for an hour or two

  • Once your bite size roll pieces have risen you next need to get a big pot of water and bring it to a boil; while the water is starting to boil place paper towel on a cutting board or a pan (I'll explain why in a minute)



    • Once the water has come to a boil plop about 10 to 12 bites into the water and let them sit in there for 45 seconds. Make sure to get all the sides touches by water!! (The pieces of dough will rise) 
    • after the 45 seconds are up remove the dough with a slotted spoon. Place the dough pieces on the paper towel so they can cool down and dry off! 
    • Repeat this step until all your dough pieces have been into the water

  • Once they are all done with the past step you will remove the dough carefully and place them on a greased cooking sheet




  • Cook the pretzel bites at 375 degrees for about 15 minutes. (I turn them half way through the time to help all sides cook evenly)




  • While they are cooking melt some butter in a bowl and get your topping you want to place on it out (Parmesan cheese, cinnamon and sugar, nacho cheese, or sea salt)




  • Once done cooking butter those pretzel bites generously and then either roll the bites in the topping or sprinkle the topping over the bites! 




  • Super easy to make and super yummy! Perfect for an after school snack or a party with family.

    CHICKEN ENCHILADA PASTA

    2-3 Chicken breasts cooked and shredded
    2 Tbsp olive oil
    2 garlic cloves, minced
    1 medium onion diced
    1 red pepper diced
    1 4oz can diced green chiles
    1/2 tsp salt
    2 tsp chili powder
    1 tsp cumin
    2 10 oz cans green chili endhilada sauce
    2/3 cups red enchilada sauce
    2 cups shredded cheese
    1 cup sour cream
    Penne pasta

    OPTIONAL TOPPINGS
    Avocado
    Green Onions
    Black Olives
    Tomatoes
    Sour Cream

    Cook chicken, drain, and shred. Meanwhile boil pasta according to package and chop the veggies.
    Heat olive oil in a deep skillet and cook onions for about 5 minutes. Add garlic and red pepper and cook for another 5 minutes.
    Add cooked chicken, green chilies, cumin, chili powder, salt and enchilada sauces. Let sauce simmer for about 10 minutes.
    Add cheese and stir until melted and heated through. Toss in sour cream, but do not let it boil. Cook on low heat and stir until sour cream is well mixed and heated trough.
    Drain pasta and return to pot. Pour sauce over pasta and mix well. Serve and garnish with toppings of your choice.

    *Though it might sound like this recipe will be hot and spicy, believe me it is not and is really good. I'm not a spicy fan AT ALL. So for all you delicate flowers, fear not, this is just right! :}

    Unstuffed Cabbage

    1LB ground beef
    1/2 cup diced onion
    8 cups cabbage chopped
    1/2 tsp salt
    2 cans diced tomatoes (I use Italian)
    1/4 tsp pepper
    1 can tomatoe soup
    Brown sugar to taste
    Water as needed


    Brown hamburger with onion, drain. Add cabbage. Cover and cook at medium heat for 5-7 minutes. Add tomatoes, sugar, soup, salt, pepper, and water. Cover and simmer for 10 minutes. Serve over rice or pasta.

    Adding Labels to our Posts

    Yay!  I'm so excited for all the feedback I've received already!  This is going to be really fun and we can't wait to try all the new yummy recipes that all of you share!!!

    REMINDER: When you create a post, will you make a "label" for it (at the bottom of the "New Post")... that way we can group all the recipes and they'll show up under "Our Yummy Recipes" on the sidebar!  (ie... Main Dishes, Desserts, Salads, Side Dishes, Breads.... etc!)

    Hamburger Rice Caserol

    1 cup Rice, cooked
    1 lb Hamburger
    1 1/2 cup Celery, chopped
    1 cup Onion, chopped
    1 Tbs Butter
    2 Tbs Brown Sugar
    1 can sliced Mushrooms (4oz)
    10 1/2 oz can Chicken & Rice Soup
    1/4 cup Soy Sauce

    Over medium heat, brown Hamburger.  Add Celery and Onions.  Cook for 5 minutes.  Add Butter, Soy Sauce, Brown Sugar, Mushrooms, Soup and cooked Rice

    Corn Puffs

    1 large bag of Corn Puffs
    2 sticks Butter
    1 cup Sugar
    3 Tbs Water
    1 tsp Vanilla

    Pour Corn Puffs into a large bowl and set aside.  Combine Butter, Sugar and water in a saucepan and bring to a boil.  Boil for 6 minutes.
    Remove from heat and stir in Vanilla.  Pour over Corn Puffs and stir/toss the puffs until they are all coated with sugar mixture.
    Spread the Corn Puffs out on a cookie sheet and let them cool.
    Store in air-tight container.

    Coconut Almond Rice Chex Mix

    1 box Rice Chex
    1 large bag Coconut flakes
    1 large bag sliveredAlmonds
    2 cups Light Karo Syrup
    2 cups Sugar
    2 sticks Butter
    1/2 tsp Almond Extract

    Combine Rice Chex, Coconut and Almonds in a large bowl and set aside.  In a saucepan, combine Karo Syrup, Sugar and Butter.  Bring to boil and boil for 2 minutes.  Remove from heat and add Almond Extract.
    Pour mixture over Chex mixture and stir/toss until they are all coated.
    Store in air-tight container, once cooled.

    Lemon Jello Pudding

    1 pkg Lemon Cook and Serve Pudding
    1 pkg Peach Jello
    Cool Whip

    Dissolve Peach Jello in 3 cups boiling water.  Make Lemon Pudding using the directions on the box. (Use the whole egg)
    Mix pudding and jello together and whip.  Pour into 9x13 baking dish and refrigerate until it is set.
    Top with Cool Whip

    Poppy Seed Chicken

    3-4 Chicken Breast
    1 can Cream of Chicken Soup
    1 cup Sour Cream
    2 cups Ritz Crackers, crushed
    1 Tbs Poppy Seed
    1/2 cup Butter, melted

    Boil chicken until it is thoroughly cooked.  Remove from water and cut into cubes.  Place in an 8x8 casserole dish.
    Mix together Cream of Chicken Soup and Sour Cream and spread over chicken.  Mix the crushed Ritz Crackers with the Poppy Seed and Butter.  Sprinkle over soup and chicken mixture.
    Bake at 350 degrees for 20-30 minutes.  Serve over rice!

    Starting our Cookbook!

    So, I decided to start a blog, where our whole family can share their favorite recipes with everyone!  I think it will be really fun and I hope our family will do this with us!  Hope everyone enjoys these yummy recipes!
